Peppermint Creams ~ recipe below video

This super simple recipe from The Pooh Cookbook has been a family favourite for over 40 years and makes the perfect gift for family and friends; economical, wonderful fun to make and looks extra special wrapped in hand painted tissue paper and tied up with a big red bow.

1 Egg white
12 Oz Icing sugar, sieved
Few drops peppermint essence

1. Separate the egg white and place in a mixing bowl. Using a fork whisk until frothy.
2. Using a wooden, gradually beat in about two thirds of the sieved icing sugar.
3. Add peppermint essence to taste ~ take care not to add too much!
4. Turn the mixture out on to a clean work surface and knead in the remaining icing sugar. Check the flavour and add more peppermint to taste.

5. Divide the mixture into two and roll each into a sausage shape.
6. On a board and using a knife, cut each portion into 1/4 inch thick.
7. Leave the peppermint creams separated out to prevent them sticking to one another, until firm.
8. Wrap in tissue paper, tie with a bow and brighten up someone's Christmas!
