Apple & cinnamon cakes with spiced maple icing

" These little cakes are perfect to make for bonfire night. Sweet apple wrapped in spices and topped with a delicious maple dressing, which has a little, sparkly surprise! "

Makes 12 cakes

For the cakes

2 small apples, grated
175g plain flour
175g caster sugar
150g melted butter
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp baking powder
1 tsp vanilla extract
3 medium eggs
30g pecans, chopped (optional)
A pinch of salt

For the icing

200g cream cheese
1 tbsp icing sugar
3 tbsp maple syrup
1 tsp ground cinnamon

*popping candy to decorate

Preheat the oven to 190C and line a 12 hole muffin tin.

Start by melting the butter in a saucepan. Set aside to cool slightly.

Beat together the eggs, sugar and vanilla extract, then add the flour, spices, baking powder and nuts (if using) until well combined. 

Now gently mix in the melted butter, a bit at a time, until well combined and fold in the grated apple.
Spoon the mixture into the paper cases, bringing it up ¾ of the way, and pop in the oven for about 25 mins.

Test the cakes with a skewer, if it comes out clean then they are ready. Set aside to cool whilst you make the icing.

Whisk together the cream cheese, spices and icing sugar. Then gently incorporate the maple syrup until you have a nice, smooth mixture.
When the cakes have completely cooled, top with the icing and finish with some popping candy.
